For lunch I had some homemade tofu noodle soup and a salad made with our CSA vegetables. Filling & light!
The recipe for the soup is from May All Be Fed by John Robbins, which is one of my favorite vegan cookbooks. The recipes are always fantastic and please even meat eaters. You can find the recipe for the soup HERE.
